Crops to plant in August for Zone 3


We have roughly 45 days left of growing from Aug 1st to Sept 15 which is generally our last frost free day. Look for seeds that mature in 45 days or less, also cold weather crops that can take a frost and some actually benefit from it. Here is a quick list:


45 days to maturity or less:


Radishes: Many varieties are ready to harvest in as little as 20-30 days.

Lettuce: Leaf lettuce can be ready in about 30-45 days.

Spinach: This leafy green can be harvested in 30-40 days.

Arugula: Often ready to pick in 30-40 days.

Baby Carrots: Some varieties can be harvested in about 30-45 days.

Green Onions (Scallions): Typically ready in about 30 days.

Turnips: Some varieties can be harvested in about 40-45 days.

Bush Beans: These can mature in about 45-50 days.

Beets: Baby beets can be ready in about 45 days.

Kale: Baby kale leaves can be harvested in about 25-30 days, though full maturity takes longer.


These crops can withstand frosty conditions and can be grown successfully in cooler climates or during fall and mild winter conditions. Here is the list of cold weather crops that can take a frost, along with their typical maturity dates:

  1. Kale: 55-75 days

  2. Spinach: 35-45 days

  3. Brussels Sprouts: 85-110 days

  4. Cabbage: 65-100 days

  5. Carrots: 60-80 days

  6. Swiss Chard: 50-60 days

  7. Beets: 50-70 days

  8. Collard Greens: 60-85 days

  9. Broccoli: 60-100 days

  10. Cauliflower: 55-100 days

  11. Leeks: 75-120 days

  12. Radishes: 20-30 days

  13. Turnips: 30-60 days

  14. Parsnips: 100-120 days

  15. Garlic: 240-270 days (planted in fall and harvested in late spring/summer)

  16. Mustard Greens: 30-40 days

  17. Endive: 50-60 days

  18. Rutabaga: 90-100 days

  19. Winter Lettuce: 45-60 days
